Quick Bruschetta

I have been on this Tuscan Garlic Bread kick that I have been purchasing from Wegman's. It is really wonderful but I have also been trying to limit bread in my diet. However, if you buy the bread you have to eat it. I definitely don't want to waste it so here is one thing I have been really enjoying for Breakfast. Of course you can make this for breakfast, lunch, dinner or just a snack. I have been toasting bread topped with cheese for a while now and enjoying it. Then the cherry tomatoes started coming in and I had so many I didn't know what to do with them so I thought, why not put them on my toast. So here is my quick version of Bruschetta.

Take on slice of bread like Wegman's Tuscan Garlic or something similar, of course any bread will do. Butter one side, add 4 or 5 quartered cherry tomatoes. Top with a slice of provolone, muenster, swiss or your favorite cheese. Place in toaster oven and toast. That's it. It really is very good and simple.

Peanut Butter Pie


It doesn't get any easier than this!
Delicious and creamy!

Peanut Butter Pie

1 prepared (9 inch) graham cracker or chocolate crust
1 - 8 oz. package cream cheese, softened
3/4 cup peanut butter
1 cup confectioners sugar
1 - 8 oz. container of frozen whipped topping

If desired melt 1/2 cup chocolate chips and 1 tablespoon vegetable oil in microwave for 60 seconds. Stir until melted. Spread over prepared crust and refrigerate until chocolate is firm.

Mix cream cheese, confectioners sugar and peanut butter together until smooth. Fold in whipped topping. spoon the mixture into prepared crust. Chill at least 2 hours or over night.

Garnish with whipped topping and/or chocolate curls, quartered peanut butter cups, chopped peanuts, etc. I like this pie creamy but if you want more texture try using chunky peanut butter or add chopped peanuts.

I made this garnished with whipped topping and without. It really doesn't need the extra whipped topping. I also made my own crust (it was a little thick). Both times I made the crust it was thick, thicker than I thought it should be. I think I might buy a prepared crust next time.
